Ice cream with Västerbotten cheese®, dark chocolate and cherries

Ingredients

• 100 g 3 yolks
• 1 cup sugar
• 3 cups whipped cream
• 1 tsp vanilla sugar

• 100 g Västerbottensost®, coarsely grated
• 200 g dark chocolate, melted
• Grated peel and squeezed juice of a blood orange (possibly an extra orange for decoration)
• 1 pkt frozen cherries
• 1 1⁄2 dl Amaretto
• 1⁄2 cups sugar
• 4 egg whites
• 2 cups sugar
• 2 krm acetic liquor 12 %
