Meatloaf with Sweet-and-Hot Sauce | Just A Pinch Recipes

Ingredients

• - preheat oven to 400 d/f, spray an 8 1/2
• - 1 lb ground pork and 1/2 lb ground beef
• - 1 c plain bread crumbs soaked with a small amount milk
• - 1 large egg, lightly beaten
• - 1 clove garlic, minced
• - 1/2 cup onion, diced
• - 3 tbls fresh flat leaf parsley or 1 tbls dried
• - 1/4 c low sodium chicken broth
• - 1 tsp salt and freshly ground black pepper to taste
• - for sweet and hot sauce:
• - 1/3 cup prepared ketchup or tomato sauce - i used heinz ketchup
• - 1/2 cup sugar
• - 1/3 cup water
• - 1/3 cup white wine vinegar
• - 1 tbl low sodium soy sauce
• - 1/2 tsp cayenne pepper or to your taste
• - 1 1/2 tbls cornstarch mixed with 3 tbl cold water
