Ingredients

• 3 zucchini thinly sliced lengthwise
• 3 tbsp (45 mL) butter softened
• Salt and pepper to taste
• 10 eggs
• 1 cup (250 mL) chicken stock
• 2 tsp (10 mL) finely grated lemon rind
• 1/4 cup (60 mL) lemon juice
• 1 tsp (5 mL) dried thyme
• 1 tsp (5 mL) pepper
• 2 tbsp (30 mL) chopped fresh parsley
