Ingredients: 180gr sugar; 75gr coconut flavoured spread (margarine), plus a bit more for greasing moulds; 2 eggs, separated; 120gr self-raising flour; 80gr coconut flakes, unsweetened; 1/4 tsp salt; 75ml pineapple juice (from a carton); 180-240ml syrup from a tin of pineapple (a 570gr tin has about 180ml syrup, if you want it nice and gooey get a larger one or two tins)
