Thin & Crispy Banana Oatmeal Cookies - Once Upon a Chef

Ingredients

• 1½ cups all-purpose flour, spooned into measuring cup and leveled-off
• 3 cups old-fashioned oats
• 1½ teaspoons cinnamon
• ¼ teaspoon nutmeg
• 1 teaspoon baking soda
• 1 scant teaspoon salt
• 2 sticks (1 cup) unsalted butter, softened but still cool
• 1 cup granulated sugar
• ¾ cup light brown sugar, packed
• 1 large egg
• ⅔ cup mashed bananas, from 2 overripe bananas
• 1 teaspoon vanilla extract
