Ingredients

  • 1 pound slightly frozen green peas
  • 2 carrots cubed (blanched and cooled in ice bath, a few minutes each)
  • 1/4 red onion, diced small
  • 1/2 cup finely grated cheddar (I used manchego)
  • 1/2 cup mayonnaise
  • ½ cup greek yogurt (you can use sour cream)
  • 2 tablespoons sugar (I used turbinado)
  • 4-6 slices of bacon (depending on size and thickness)
  • 2 tablespoons each of fresh parsley and dill, finely chopped
  • Chili pepper flakes, for a little heat to taste
  • Salt and pepper to taste
