- 1 pound slightly frozen green peas
- 2 carrots cubed (blanched and cooled in ice bath, a few minutes each)
- 1/4 red onion, diced small
- 1/2 cup finely grated cheddar (I used manchego)
- 1/2 cup mayonnaise
- ½ cup greek yogurt (you can use sour cream)
- 2 tablespoons sugar (I used turbinado)
- 4-6 slices of bacon (depending on size and thickness)
- 2 tablespoons each of fresh parsley and dill, finely chopped
- Chili pepper flakes, for a little heat to taste
- Salt and pepper to taste
