Bayou Sam’s Dirty Rice – Miss BeHavin's Haven

Ingredients

• 2 tbsp chicken fat, duck fat or butter
• 6 oz chicken gizzards
• 8 oz Bar Nothing Ranch Breakfast Sausage
• 3 oz extra lean stew meat, diced very small
• ¼ cup chicken livers, processed just to a slur
• 2 medium smoked pork necks
• ¾ cup Texas 1015 or equivalent, chopped large blade
• 2 medium celery stalks, sliced thin
• ½ cup red, yellow or orange bell pepper, chopped large blade
• ½ cup eggplant, chopped large blade
• ⅔ cup white wine
• 3 cups heavy chicken stock
• 2 tsp roasted garlic, minced
• 1 tbsp Bayou Sam's Triple Blast
• 1 large bay leaf
• 2 ½ tsp kosher salt
• ⅓ tsp white pepper
• ½ tsp black pepper
• ½ tsp cayenne pepper
• ½ tsp cumin
• ½ tsp oregano
• 1 ½ cups Uncle Ben's parboiled rice
• ½ cup scallions, thin sliced
