• 8 leaves romaine (Cos) lettuce
• 2 tomatoes - cut into wedges
• 1/4 small red onion - thinly sliced
• 8 thin cucumber slices - cut in half
• 1/4 green pepper (capsicum) - deseeded and finely diced
• 2 oz (60g) feta cheese - cut into small cubes
• 12 kalamata olives
