• 6 dried shiitake mushrooms, soaked in boiling water and roughly chopped
• 1 ½ cups shredded carrots
• 1 ½ cups bean sprouts
• 1 ½ cups shredded green cabbage
• 3 tsp. cornstarch
• 1 Tbsp. water
• 15-20 (8-inch) square spring roll wrappers
• vegetable oil, for frying
