Ingredients

• 1 cup quinoa, rinsed thoroughly before cooking
• 1 cup corn, pan-roasted (canned or frozen)
• 1 cup black beans, precooked/canned
• 2 cups tomatoes, chopped
• 1 green onion, thinly sliced
• 2 bunches kale, de-stem / chopped into bite sized pieces
• 1 / 3 cup lime juice
• ½ Tbsp ground cumin
• ½ tsp salt
• ½ tsp black pepper
