• or other dark beer
• 1 1⁄2 cups low-sodium chicken stock
• 2 Tbsp sherry vinegar or red wine vinegar
• 1 large onion
• quartered
• 1 red bell pepper
• chopped
• 8 cloves garlic
• peeled
• 1 tsp smoked paprika
• 1⁄2 tsp cumin
• 2 bay leaves
• 4 cups baby spinach (optional)
