Ingredients

• 8 cups chicken stock
• 1 onion, chopped about 1 cup
• 2-3 cups chicken, cooked, shredded
• 1 lb box orzo
• 1 tsp salt
• 2 large carrots, peeled, sliced, about 1 cup
• 1 tbsp flat leaf parsley, minced
• 1 tbsp olive oil
• 4 garlic cloves, minced
• 2 ribs celery, chopped, about 1 cup
