• 1 lg Shallot, finely chopped
• 2 cloves Garlic, smashed
• 3 sprigs Rosemary
• 8 sprigs Thyme
• 1 tsp Whole Black Peppercorns
• 2 tbsp Tomato Paste
• 1 tbsp Worcestershire Sauce
• 1 tsp Beef Base (bouillon)
• 1 tsp Kosher Salt
• 1 tsp Sugar
• 4 tbsp COLD Butter, cut into four pieces
