Ham and Corn Casserole - Click 'N Cook

Ingredients

• 1/2 cup green pepper, chopped
• 1/2 cup green onion (scallions), sliced, white and green separated
• 1 tablespoon olive oil
• 1 15-ounce can creamed corn
• 1 cup non fat milk
• 1/3 teaspoon black pepper
• 4 ounces ham, cubed
• 1/2 cup instant mashed potato flakes
• 2 cups sweet potatoes, shredded (or another type of potato)
• 1/2 cup Parmesan cheese, grated (or cheddar)
