Poshed-Up Coronation Chicken Salad

Ingredients

• 400g roasted/cooked chicken, skinless shredded
• 100ml Greek yoghurt or crème fraiche
• 1 tbsp mango chutney
• 2 tsp medium curry powder
• 1 lime, for squeezing
• 1 mango, stoned and sliced
• 2 spring onion, trimmed and thinly sliced
• small bag of watercress
• small bag of baby spinach leaves
• 3-4 radish, finely sliced
• sea salt
• freshly ground black pepper
• extra virgin olive oil, for drizzling
• 2 tbsp flaked almonds, toasted
• 1 red chilli, deseeded and cut into rings
• 1 tbsp chopped fresh coriander
