  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 3 tablespoons canola oil
  • 4 cloves garlic, minced
  • 1 medium white onion, chopped
  • 6 medium carrots, peeled and cut into ¼-inch rounds (about 3 cups)
  • 3 cups quartered baby Yukon potatoes
  • 1 tablespoon Herbes de Provence (or 1 tablespoon chopped fresh herbs such as rosemary and thyme)
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth (32 ounces)
  • 1 cup frozen peas
  • salt and pepper, to taste
