Beef Stroganoff - How to Cook Meat

Ingredients

• 2¼ pounds tender beef, cut into thin strips
• 3 cups sliced crimini mushrooms (baby bella)
• 1¼ cups diced yellow onion
• 2 cups beef stock
• 1 cup sour cream
• ¼ cup flour for dredge
• ¼ cup flour for roux
• 4 Tbsp butter for roux
• 1 Tbsp butter for mushrooms and onions
• 1½ Tbsp tomato paste
• 2 tsp dijon mustard
• 1 tsp lemon juice
• 1 Tbsp of vegetable oil
• 1 tsp salt
• 1 tsp black pepper
• Flat leaf parsley for garnish
