• 4 bell peppers
• 1 onion
• 2 cloves garlic
• 1/2 chili
• 3 1/2 cups rice
• 1/2 tsp ground cumin
• 1/2 tsp ground coriander
• 1 1/4 cups vegetable broth
• 2/3 cup tomato purée (passata)
• 3 1/2 oz canned black beans
• 3 1/2 oz canned white beans
• 3 1/2 oz canned sweet corn
• 1/2 tsp sugar
• 5 1/2 oz cheddar cheese (grated)
• 1/2 oz cilantro
• 2/3 cup light crème fraîche
• 1/2 lime
• salt
• pepper
• olive oil (for frying)
