Beef Enchiladas with a Chilli Sauce - Irish Beef

Ingredients

• 2 tbsp chilli oil
• 1 tbsp hot chilli powder
• 1 tbsp paprika
• pinch of caster sugar
• grated rind and juice of 1 lime
• 4 skinless striploin or sirloin steak, trimmed and cut into strips
• 2 tbsp sunflower oil
• 1 red onion, thinly sliced
• 1 red pepper, seeded and thinly sliced
• 1 yellow pepper, seeded and thinly sliced
• 8 soft corn or soft flour tortillas
• 50g (2oz) Cheddar cheese, grated
• lightly dressed green salad, to serve
• 1 onion, finely chopped
• 2 garlic cloves, crushed
• 1 red chilli, seeded and finely chopped
• ½ tsp each sweet or smoked paprika, ground cumin
• ¼ tsp ground coriander
• 400g can chopped tomatoes
• squeeze of lemon juice
• salt and freshly-ground black pepper
