Ingredients: 1 lettuce, chopped finely ( I prefer Cos Lettuce); 4 tomatoes, halved and cut into thick wedges; 1 cucumber, peeled and halved lengthwise and sliced into half rounds; 1 green or red capsicum, halved lengthwise and sliced into small strips; 1 red onion, sliced into semicircles or diced OR 1/2 bunch spring onions, sliced finely and including green part; salt; pepper; 1 – 2 teaspoons dried oregano; Extra virgin olive oil, lots; a good lug of red wine vinegar; 150g Greek feta cheese, cut into wedges or diced; kalamata olives; 1/2 bunch chopped parsley and/or 3 tbsp chopped dill (optional)
