• 250g bacon, roughly chopped
• 375 g coarsely chopped breakfast sausage
• 1/4 cup maple syrup
• 2 tbsp. tbsp El Paso Tex-Mex spice
• 1 large potato cut into small cubes
• 1 French shallot, finely chopped
• 1 seeded jalapeno pepper, finely chopped
• 1/2 red pepper, roughly chopped
• 2 tbsp. tbsp Tequila Lime hot sauce
• 4 scrambled eggs
• 1/2 cup of milk
• 100g grated Tex-Mex cheese
• 4 slices of orange cheese
• Salt and pepper to taste
