• 3 to 4 pounds starchy potatoes
• 2 to 3 eggs
• 1/2 to 1 cup all-purpose flour
• Salt, to taste
• 1/4 teaspoon nutmeg
• 1/4 cup chopped fresh parsley
• Oil (for browning)
• Salt and pepper, to taste
• Paprika, to taste
• 1/2 to 1 pound coarsely chopped onions
• 1 large carrot, peeled and cut into 3-inch lengths (optional)
• 2 chopped tomatoes (optional)
