Ingredients

• 500 g ready rolled out puff pastry
• 5 tbsps sugar for the syrup
• Pastry cream (see below)
• 125 ml fresh whipping cream
• 300 g strawberries, washed, hulled and cut into quarters
• Icing sugar
• Creme patissiere ( Pastry Cream)
• 3 egg yolks
• 60 g caster sugar
• 15 g cornflour
• 1 tsp plain flour
• 280 ml milk
• Few drops vanilla essence
• 1 tsp butter
