Chicken With Shiitake Mushrooms

Ingredients

• 1 tablespoon olive oil
• 6 skinless boneless chicken breast halves (about 1-1/2 pounds)
• 3/4 pound shiitake mushrooms, coarsely chopped
• 1 medium leek, washed well and sliced
• 4 cloves garlic, finely chopped
• 1 tablespoon minced fresh ginger
• 2 tablespoons arrowroot powder
• 2 tablespoons water
• 2 cups chicken or vegetable broth
• 1/2 cup dry white wine
• 1 teaspoon fresh oregano
• 3/4 teaspoon salt, to taste
