Ingredients

• 3 medium/large apples (any red baking apple (Royal Gala, Honey Crisp, etc.))
• ⅓ cup soft brown sugar
• ½ tbsp ground cinnamon
• ¼ cup soft brown sugar
• ⅓ cup white granulated sugar
• 1½ cups all purpose flour
• ¼ tsp salt (omit if using salted butter)
• 1 tsp ground cinnamon
• ½ cup unsalted butter (melted)
• 1¼ cups all purpose flour
• 2 tbsp cornstarch (also known as cornflour in some countries)
• 1 tsp baking powder
• ¼ tsp baking soda
• ¼ tsp salt
• 1 tsp powdered ginger
• ¼ tsp ground cloves
• ¼ tsp ground nutmeg
• ¾ cup soft brown sugar
• 2 large eggs (room temperature)
• ½ cup unflavoured vegetable oil (I use canola oil)
• ¼ cup Greek yoghurt (room temperature)
• 1 tsp vanilla essence/extract
