Ingredients

• 1.3kg sweet potatoes
• 1 cup corn kernels (approx 1.5 cobs)
• 2 spring onions, sliced
• 1/4 bunch coriander, roughly chopped
• 1/4 tsp cayenne pepper
• 1 tsp cumin
• 1 tsp salt
• 1 large egg
• 1/3 cup yellow cornmeal
• 1 cup plain breadcrumbs
• 1/2 cup vegetable oil for frying
• 1 cup plain yogurt
• 1 clove garlic, minced
