Susanina's Vegetarian Kitchen | Lemon Star Cookies

Ingredients

• 1 cup Unsalted Butter Softened to room temperature
• 1 cup White Sugar Half a cup is used for the dough, and half for the lemon curd.
• 2 Egg Whites
• 3 cups Flour, All Purpose, Unbleached
• 4 Egg Yolks
• ⅓ cup Lemon Juice Freshly squeezed
• 4 tbsp Unsalted Butter Softened to room temperature, or warm enough to mix easily
• ½ dash Salt This is for the cookie dough. The lemon curd needs a pinch as well.
• 2 tsp Lemon Zest
• 1 tsp Vanilla
