Pork belly sandwich on the BBQ – Barbecook

Ingredients

• FOR THE BELLY BACON:
• 700g pork belly bacon
• 3 tablespoons brown sugar
• 2 tablespoons salt
• 1 teaspoon chilli
• 1 teaspoon black pepper
• 1 teaspoon coriander seeds
• 1 tablespoon sweet paprika
• 1 teaspoon garlic powder
• 1 teaspoon thyme FOR THE MARINATED GHERKINS:
• 4 large gherkins
• 2 tablespoons olive oil
• 4 tablespoons rice vinegar
• Pepper and salt FOR THE GARLIC SAUCE:
• 200 ml full bodied yoghurt
• 3 tablespoons mayonnaise
• 2 cloves of garlic
• Pepper and salt FOR THE FINISHING TOUCH:
• 3 sweet pointed peppers
• A few salad leaves
• A few sprigs of fresh coriander
• A few sprigs of fresh mint
• 2 large Turkish breads or several small Turkish breads
• Pine nuts
• Spicy sauce
