Recipe Baked Eggs with Bacon

Ingredients

• 3 slices of bacon
• 2 slices onion
• Handful of fresh spinach, about 1 cup of packed leaves
• 1 slice of bread, toasted and buttered, I used 12 grain but any bread will work
• 2 thin slices havarti cheese
• 1 large egg
• 1 tablespoon heavy whipping cream
• Salt and pepper to taste
• A pinch each of fresh herbs of your choice. I used rosemary, parsley and thyme
