Ingredients

• 5 oz / 150g dried rice noodles
• 2 oz / 60g dried black mushrooms
• 3 tbsp butter
• ½ tsp sesame oil
• 5 oz / 150g fresh spinach leaves
• 3 cloves garlic, finely chopped
• ½ tsp salt
• 3 chicken thighs (bone-in)
• 2 tbsp sherry
• 1 tbsp dark soy sauce
• 1 tbsp light soy sauce
• ca. 2 tbsp vinegar
• ½ tbsp black sesame seed
• salt, pepper, vinegar and sesame oil to taste
