Lamingtons recipe by Mrs Ally

Ingredients

• 200g good quality butter
• ¼ cup oil
• 2 cups sugar
• 4 extra-large eggs (not jumbo)
• 1 teaspoon vanilla essence
• 3 cups flour
• 2 teaspoons baking powder
• 2 teaspoons cream of tartar
• ¼ teaspoon salt
• 1 and ½ cups warm buttermilk
• 3 cups icing sugar
• 3 tablespoons good quality cocoa powder (Nestle or Hersheys)
• 2 teaspoons coffee (Jacob's or Nescafe)
• 1 tablespoon butter
• 2 cups boiling water
