- 1 pound small (1 1/2- to 2-inch) boiling potatoes, scrubbed well
- 1/2 cup dry white wine
- 3/4 cup chicken stock (homemade or store-bought)
- 1 tablespoon cold unsalted butter, cut into four pieces
- 1 teaspoon fresh lemon juice, or to taste
- Freshly ground black pepper
