Ground Beef Chili

Ingredients

• 4 ancho chiles
• 2 pasilla chiles
• 2 guajillo chiles
• 2-4 chipotle chiles in adobo sauce
• 1 yellow onion large diced
• 2 pounds lean ground beef
• 2 cans stewed tomatoes 16 oz
• 2 cans Tomato paste 6 oz
• 3 cans kidney beans 16 oz
• 4 cloves Garlic minced
• 2 teaspoons soy sauce
• 1 tablespoon ground cumin
• 1 tablespoon ground coriander
• 1/2 teaspoon ground clove
• 1/2 teaspoon Cinnamon
• 1 tablespoon coffee Super fine grind
• 1 ounce unsweetened chocolate
• 2 bay leaves
• 1 tablespoon Mexican oregano
• salt to taste
• black pepper to taste
