Ingredients

• For the fries & truffle seasoning
• 700 g waxy potatoes
• 2 tbsp cornstarch (or potato starch)
• 1 tsp baking powder (optional - for extra crunch)
• Salted water for blanching
• Vegetable oil for deep-frying or air fryer
• 1–2 tsp Fries-Powder "Truffle Deluxe"
• Recommendation: a little finely grated Parmesan to finish
• For the truffle mayonnaise:
• 4 tbsp mayonnaise (or vegan alternative)
• 1 tsp Truffle Deluxe fries seasoning
• Optional for extra flavor:
• 1 tsp lemon juice or white balsamic vinegar
• A pinch of pepper
• ½ tsp grated Parmesan (for extra umami)
