Peach Pie

Ingredients

• 6 cups peaches peeled, pitted, and sliced (about 3 pounds)
• 1/2 cup cup granulated sugar
• 1/2 cup light brown sugar
• 1 small lemon zested to yield 1 teaspoon zest and juiced to yield 2 teaspoons
• 1/4 tsp ground allspice
• 1/4 tsp ground nutmeg
• 1 tbsp crystallized ginger minced
• 1/4 tsp table salt
• 3 tbsp quick-cooking tapioca (up to 4 tbsp)
