Thai Chicken Satay Wings with Spicy Peanut Dipping Sauce :: The Meatwave
A Thai chicken satay marinade does wonders to these wings that are grilled and served with a spicy peanut dipping sauce.
Ingredients
- For the Sauce
- 1/2 cup creamy peanut butter
- 1/4 cup hot water
- 2 tablespoons Thai red curry paste
- 2 tablespoons palm sugar or light brown sugar
- 2 tablespoons Sriracha
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon freshly squeezed lime juice from 1 lime
- 1 teaspoon finely minced garlic
- 1/2 teaspoon red pepper flakes
- 2 scallions, thinly sliced
- Kosher salt, to taste
- For the Wings
- 2 stalks lemongrass, outer leaves discarded, tender core finely chopped
- 1/4 cup vegetable oil
- 1/4 cup fish sauce
- 1/4 cup palm sugar or light brown sugar
- 2 tablespoons freshly squeezed lime juice from 1 lime
- 2 tablespoons soy sauce
- 1 tablespoon finely minced fresh garlic (about 3 medium cloves)
- 2 teaspoons ground turmeric
- 2 teaspoons ground coriander
- 2 teaspoons Sriracha
- 3 pounds whole chicken wings
- Metal or bamboo skewers
