Chicken & Chorizo Paella Recipe | Booths Supermarket

Ingredients

• 150g chorizo sausage, roughly chopped
• 3 chicken legs, skin and bone removed and cut into large chunks
• 1 large onion, thinly sliced
• 1tsp smoked paprika
• ½-1 red chilli, de-seeded and finely chopped
• 2tbsp olive oil
• 200g paella rice or risotto rice
• 1ltr hot chicken stock, made from cube
• 1 red pepper, thinly sliced
• 150g frozen peas
• 3 tomatoes, roughly chopped
• Handful of chopped fresh parsley
• 1 lemon, sliced into pieces
