Ingredients: 3 good sized zucchini weighing 2 1/4 pounds or thereabouts; 2 1/2 cups diced cherry tomatoes (a mix of red and yellow is nice); 3 garlic cloves, minced; 2 Tablespoons extra virgin olive oil plus more for brushing the zucchini and drizzling; 1 1/2 teaspoons dried oregano; 2-3 Tablespoons chopped fresh basil, plus more for garnish; Pinch of red pepper flake, optional; 6 Tablespoons finely grated Parmesan cheese; 2 Tablespoons Panko bread crumbs; 10 ounces fresh mozzarella, shredded; Kosher Salt and Freshly Ground Black Pepper
