Recipe: Creamy, Smoky Beef Stroganoff

Ingredients

• 1 large onion, peeled and finely diced
• 2 cloves garlic, crushed or finely grated
• 20g unsalted butter
• 500g chestnut mushrooms, cut into quarters
• 400g fillet steak, sliced
• 3 tablespoons sour cream, plus extra to garnish
• 150ml beef stock
• Handful chives, very finely sliced
• 1 tablespoon wholegrain mustard
• 1 teaspoon Dijon mustard
• ½ teaspoon smoked paprika, plus extra to garnish
• Neutral oil, for cooking
