• 1 cup white onion, chopped
• 2 cloves garlic, minced
• 2 tablespoons yellow pepper paste (optional)
• 2 cups Arborio rice
• 1/2 cup white wine
• 1 cup diced carrot
• 1 cup diced red bell pepper
• 4 cups fish or vegetables, hot
• Salt

• 1 cup whole kernel sweet corn
• 1 cup sweet peas
• 2 tablespoons chopped cilantro
• 1 lb fresh scallops
• Lemon slices, to serve
