• 2 tbsp of butter
• 2 tbsp of olive oil
• 13oz – 370g assorted mushrooms
• 1 finely chopped shallot
• ½ tsp dried thyme or fresh sprigs
• 2-3 cloves of garlic finely chopped
• 1 ½ tbsp of all-purpose flour
• 1 ½ cups of chicken stock
• ½ cup sweet sherry
• ½ cup cream (heavy)
• 1 handful of fresh parsley leaves
