Carisma Indian Spiced Potatoes - Mitolo Family Farms

Ingredients

• 750g potato, cut into medium pieces 2 tbsp vegetable oil
• 1 onion, sliced
• 2 garlic cloves, chopped
• 1 thumb sized piece ginger, julienned
• 1 cinnamon stick
• 2 tsp mustard seeds
• 1 tsp tumeric
• 1 tsp ground cumin
• 1 tsp ground coriander
• 1 tsp fine sea salt
• 1 cup vegetable stock/ water
• GARNISH
• green chilli, sliced
• coconut flakes
• coriander leaves
• FLAVOURED YOGHURT
• 250g yoghurt
• 1 garlic clove, finely chopped
• 1/2 small cucumber, grated, excess moisture squeezed out zest & juice from 1 lime
• pinch of garam marsala
