• 8 ounces whole-milk ricotta cheese (1 cup)

• 1 tsp pure vanilla extract
• 2 & 1/4 cups all-purpose flour
• 1/2 tsp baking soda
• 1 tsp baking powder
• 2 cups powdered sugar
• 1/4 cup lemon juice, milk, or water
• 1 tsp vanilla extract
• Rainbow sprinkles or colored sprinkles of your choice
