Ingredients

• 3 cups Unbleached All-Purpose Flour
• ¾ tsp Salt
• 8 tablespoons unsalted butter, room temperature
• 1 large egg, beaten
• 3 to 5 tablespoons water
• 2 teaspoons white vinegar
• ¾ pound cubed or diced lean beef (uncooked)
• ½ cup diced turnips, parsnips, or rutabagas
• ½ cup diced onion
• 1 cup peeled, diced baking potatoes
• 1 Tablespoon minced fresh thyme
• Salt and Pepper to taste
• Egg Wash
• 1 large egg, beaten with 1 Tablespoon water
