- 1 Lemon sole, filleted
- 25g plain flour
- salt and pepper
- 75g panko breadcrumbs, blitzed
- 2 tbs parsley
- 2 eggs beaten
- 2 large gherkins julienned
- ½ cucumber, sliced
- ½ red onion peeled and diced
- 2 tbs parsley chopped
- 1 tbs Dijon
- 1 tbs white wine vinegar
- 50ml veg oil
- Splash water
- Thick Greek yoghurt
