• 500 g lean minced beef
• 1 red onion, finely chopped
• 3 garlic cloves, crushed
• 1 red chilli, chopped, plus extra to garnish
• 1 stalk celery, finely chopped
• 1 beef stock cube
• 3 tsp chipotle chilli paste
• 400 g can red kidney beans
• 400 g can chopped tomatoes
• 1 small bunch coriander, chopped
• 8 tortillas
• 200 g cheddar cheese, grated
• 3 tbsp jalapeños, chopped
• 100 ml soured cream
