• 1 1/2 pound thick cut bacon, divided
• 3 carrots, peeled and cut into 3″ pieces
• 3 leeks, cleaned and cut into 3″ pieces
• 2 stalks celery, cut into 3″ pieces
• 1 onion, quartered
• 2 apple, sliced peels on
• 1 14-pound turkey
