Lentil Salad Recipe | Ensalada de Lentejas

Ingredients

• 250g of green lentils
• 1 small onion peeled and halved
• 1 carrot peeled and halved
• 2 cloves of garlic peeled
• 1 bay leaf
• salt
• 4 tablespoons of olive oil
• 1 tablespoon of wine vinegar
• 2 tablespoons of onion chopped very, very finely
• 1 clove of garlic crushed
• 2 tablespoons red pepper chopped very very finely
• freshly ground black pepper
