Baked Stuffed Zucchini 2 | Just A Pinch Recipes
I found this recipe in a Joy Of Cooking Cookbook years ago and adapted it to meet my needs. It was a hit with my hubby and my family.
Ingredients
- 2 medium zucchini
- 2 teaspoon(s) olive oil or butter
- 3 tablespoon(s) finely chopped onion
- 1 - clove garlic, minced
- 1 large egg, lightly beaten
- 1/2 cup(s) grated parmesan cheese
- 1/3 cup(s) Italian bread crumbs
- 2 tablespoon(s) chopped parsley
- 2 teaspoon(s) thyme
- - salt and pepper to taste.
