- 50g icing sugar, plus 1 tbsp
- 600ml pot double cream
- 50ml Amaretto
- ½ tsp almond extract
- 6 large egg whites
- 300g white caster sugar
- ¾ tsp white wine vinegar
- 100g flaked toasted almonds
